Smoked Salmon w Avocado Salsa N Prawn

Heyyy guys,,,I just got back 2 Sydney~~
Took plane from 8pm (Medan,Indonesia) till 11am (Sydney). Didn't sleep at all till' 8pm in Sydney,hahahaaaa,,,I just took 3 cups of coffee on plane N Im all fresh~

This morning I wake up 2 early,,,cant go back 2 sleep,,   =(
Bloody borin',,,I open up my receipe book,,try 2 make simple food. Im quite lazy 2 make complicated 1,,haha   =p
It called..Smoked Salmon w Avocado Salsa N Prawn~



Ingredients:                         -serves 8-
24slices smoked salmon
16 cooked king prawns
1 tbs salmon roe
8 fresh dill springs
Avocado Salsa:
2 medium egg tomato, seeded, chopped finely
2 small avocados, chopped finely
1/2 small red onion, chopped finely
1 tbs finely chopped fresh chives            Lemon N Chive Dressing:
2 tbs finely chopped fresh dill                 60ml olive oil
1 tsp finely grated lemon rind                 2 tbs lemon juice
2 tbs lemon juice                             1tbs finely chopped fresh chives

Method:
- Combine avocado salsa ingredients in bowl.
- line 8 holes of a 12-hole muffin pan w plastic wrap, bringin' d plastic 3cm above the edge of the hole. Place 1 salmon slice in base of each hole N fold over excess. Top each slice w 2 tbs of salsa. Lay another slice of salmon then salsa N end up w third slice of salmon.
- shell N devein prawns, leave d tails.
- Place salmon N chive dressing ingredients in screw-top jar, shake well.
- Turn out N unwrap salmon parcels. Devide parcel among serving plates, top w prawns, roe N dill, drizzle w dressing. enjoy~~
